WThis is a home-style take on a cocktail from our latest drinks list. It's a batch premix that's bursting with tastes associated with Christmas time, making it ideal for hosting a festive gathering. Save the extra syrup you can use for brunch beverages, puddings, or to make another batch of the drink.

Bikini Recipe

Makes enough for 10 servings

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Drink (produces 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Method

For the Citrus Syrup: Put all the items in a pan, heat until it reaches a gentle boil, stirring so the sugar melts. After that, turn off the heat and leave to cool entirely. Pour into an sealable bottle, seal keeping it chilled, it can be stored for about one month.

Preparing the Premix: Pour the specified liquid ingredients into a big jug, allow it to infuse for 60 minutes, then strain preferably using cheesecloth, so it's completely strained.

For serving: Pour 85ml of the premix into a cocktail shaker packed with ice, and stir carefully for one minute to chill. Filter into an cold coupe glass or similar, decorate with the cranberries and finish using a quick spritz with the mandarin essence over the drink.
